Restaurant General Manager

Fertitta Entertainment is seeking an experienced Restaurant General Manager to lead the day-to-day operations of a high-volume restaurant location.

The General Manager is responsible for building and developing the restaurant team, delivering an exceptional guest experience, maintaining operational standards, controlling labor and food costs, and driving profitable restaurant performance.

The ideal candidate is a hands-on hospitality leader who can balance people leadership with strong operational and financial discipline.

Key Responsibilities

  • Lead all day-to-day restaurant operations.
  • Recruit, train, coach, develop, and retain restaurant team members.
  • Directly manage assistant managers and department leaders.
  • Maintain appropriate staffing levels and build effective employee schedules.
  • Ensure exceptional guest service and resolve escalated guest concerns.
  • Maintain company standards for food quality, service, cleanliness, and hospitality.
  • Monitor restaurant sales, labor costs, food costs, waste, and other operating expenses.
  • Review restaurant financial results and identify opportunities to improve profitability.
  • Establish clear performance expectations and hold managers and employees accountable.
  • Coach underperforming employees and develop high-potential team members.
  • Maintain compliance with food-safety, sanitation, workplace-safety, and company policies.
  • Manage inventory, ordering, receiving, and product controls.
  • Partner with culinary leadership to maintain consistent food quality and execution.
  • Lead restaurant operations during high-volume nights, weekends, holidays, and special events.
  • Conduct pre-shift meetings and maintain strong communication across front- and back-of-house teams.
  • Build a positive workplace culture focused on accountability, hospitality, teamwork, and employee development.

Preferred Qualifications

  • 3+ years of restaurant management experience.
  • Previous General Manager, Assistant General Manager, or high-volume restaurant leadership experience preferred.
  • Experience managing hourly employees and management-level team members.
  • Demonstrated ability to recruit, train, and retain employees.
  • Experience with scheduling and labor management.
  • Understanding of restaurant P&L statements.
  • Knowledge of food cost, labor cost, inventory, and operational controls.
  • Strong guest-recovery and conflict-resolution skills.
  • Ability to lead in a fast-paced, high-volume environment.
  • Excellent communication and coaching skills.
  • Flexible availability including evenings, weekends, and holidays.
  • ServSafe or comparable food-safety certification preferred.
