Job Description

TheCook 1 – Signature (Fine Dining)role is a critical culinary position within Walt Disney World®’s premier dining experiences. This role requires advanced culinary proficiency, a deep understanding of classical and modern techniques, and the ability to execute consistently at a high level in fast-paced, high-volume Signature kitchens. Candidates must demonstrate leadership readiness, precision, and a commitment to culinary excellence.

Responsibilities

• Executeadvanced culinary techniques, including emulsification, reduction, butchery, and a la minute cooking
• Prepare and plate dishes toSignature-level presentation standards, ensuring visual appeal, portion accuracy, and flavor balance
• Maintain strict adherence toHACCP protocols, including time/temperature controls, cross-contamination prevention, and allergen awareness
• Operate and maintainspecialized kitchen equipmentsuch as immersion circulators (sous vide), combi ovens, cryovac machines, dehydrators, and planchas
• Collaborate with Sous Chefs and peers to ensurestation readiness, mise en place accuracy, and service flow efficiency
• Supportdietary accommodations(e.g., gluten-free, vegan, allergy-sensitive) with precision and care
• Uphold Disney’sFive Keysand Signature service standards through every guest interaction and plate served

Basic Qualifications

• Minimum2 years recent experiencein a high-volume, full-service kitchen (grill, sauté, or hot line), or1 year with accredited culinary certification
• Proficient inknife handling, station setup, and execution across multiple line stations
• Demonstrated experience withclassical techniques(e.g., roasting, braising, poaching, saucier work) andmodern applications(e.g., molecular garnishes, sous vide)
• Working knowledge ofbutchery and seafood fabrication, including yield optimization and waste reduction
• Strong understanding offlavor development, seasoning, and ingredient pairings
• Ability to work collaboratively in ateam-driven, high-pressure environmentwhile maintaining focus and quality

Compensation Details

The pay rate for this role in Florida is $27.10 per hour.
